🥗 Herring and Beet Salad Roll (Herring Under a Fur Coat)

A festive rolled version of the classic Eastern European layered herring and beet salad, made with potatoes, carrots, eggs, and mayonnaise.

Medium⏱ 2 h 40 min👥 8 servings

Method

1

Boil the beets, potatoes, and carrots until tender. Let them cool completely, then peel.

2

Hard-boil the eggs, cool, and peel them.

3

Grate the beets, potatoes, carrots, and eggs separately. Finely chop the onion and cut the herring fillets into small pieces.

4

Combine the gelatin with cold water and let it bloom according to the package instructions. Gently heat until completely dissolved, but do not allow it to boil.

5

Combine the grated beets with some of the mayonnaise. Add the warm dissolved gelatin and mix thoroughly.

6

Separately mix the potatoes, carrots, and eggs with a small amount of mayonnaise. Season lightly with salt if needed.

7

Spread a large sheet of plastic wrap on your work surface. Arrange the beet mixture in an even rectangular layer. Add the potatoes, carrots, onion, and eggs in layers, making each successive layer slightly narrower. Arrange the herring in the center.

8

Using the plastic wrap to help you, carefully bring the opposite sides of the beet layer together around the filling. Shape into a firm roll without pressing too hard.

9

Wrap the roll tightly in plastic wrap and refrigerate for at least 2 hours, until firm enough to hold its shape.

10

Carefully remove the plastic wrap, transfer the roll to a serving platter, and slice into portions.
