Pearl Barley with Pork in Clay Pots
A hearty oven-baked dish with tender pork, pearl barley, tomatoes, and melted cheese. Soaking the barley beforehand helps it cook until soft and absorb the rich flavors of the meat and vegetables.

Method
Cut the pork into small pieces.
Cook the onion until soft. Slice or chop the tomatoes.
Divide the ingredients between two small oven-safe pots in layers: pork → pearl barley → onion → tomatoes. Season with salt, black pepper, paprika, and garlic powder.
Pour in enough broth or water to just cover the pearl barley.
Bake at 190°C / 375°F for 45 minutes.
Sprinkle the grated cheese over the top and bake for another 15 minutes, until melted and lightly golden.
